Eating For Endurance...but also, Eat For Life

I have been listening to the Eat for Endurance podcast since it’s inception a few years ago. I don’t know how I found it but it probably appeared on a Google search during a long training block where I didn’t think I was fueling appropriately. The host is a sport dietician named Claire Shorenstein, who interviews professional endurance athletes about both their daily diet but also their history with food, how they grew up, and what they do to fuel their training. Claire messaged me a few months ago about coming on her show and I had a star-struck moment. ME???? She has interviewed Courtney Dauwalter, Michael Wardian, Maggie Guterl, Mike McKnight, Stephanie Bruce, and so many other athletes I do not consider peers but in a class all their own. First I wondered if she had the wrong number. I mean, there are a few Ellie’s in our sport and Ellie Greenwood might be the caliber of athlete she was looking for. Nonetheless, she did want to talk to me and we had a wonderful conversation. I highly encourage you to listen to it and then listen to all the back episodes as they are just as relevant today as they were when she recorded them.

While you wait for the podcast to load, I am including a snapshot of what I eat on the daily. Enjoy the show!

Breakfast: cereal with Skratch recovery mix, collagen powder, sunflower seeds, blueberries, banana and peanut butter. Plus an apple and lots of tea!

Lunch: I eat a Skratch rice bowl (or two) with rice, kale, hummus, squash, kimchi and tofu. Plus another apple and some iced coffee.

Afternoon snack: overnight oats or muffin, something past the sell date from the kitchen

Dinner: some combo of cheese, beans and carbohydrate. Today is was chips. Plus salsa and Skratch hydration mix.

Night snack: yogurt with Skratch recovery, nut butter and granola
