Banana Pancakes

Ingredients

1 ripe banana, mashed

1/4 cup milk

1 t vanilla extract

1/2 cup flour

1 t baking powder

Instructions

Preheat a skillet or griddle to medium heat. Combine the mashed banana, vanilla and milk. The consistency should be a bit lumpy. In a separate bowl, mix the flour and making powder. Marry the wet and dry ingredients, do not over-mix. Grease your pan WELL (I use coconut oil—approx 1T). Spoon the batter into the griddle, should make 2-3 good sized pancakes. Cook for 3-4 minutes or until there is a bit of smoke coming from the bottom (DO NOT FLIP EARLY!) Flip and cook another minute or so. Pancakes will be moist and very banana. Enjoy with your favorite toppings!
