Banana Pancakes
Ingredients
1 ripe banana, mashed
1/4 cup milk
1 t vanilla
1/2 cup flour
1 t baking powder
Instructions
In a small bowl, combine mashed banana, milk and vanilla. In a separate bowl, mix together the flour and baking powder. Marry the wet and dry ingredients, but try not to over mix. The batter will be lumpy.
Heat a skillet to medium and oil the pan WELL (I use about 1T of coconut oil). Spoon the batter onto the griddle in 2 or 3 pools. Cook for 3-4 minutes or until a few bubbles start forming around the edges. The batter is too thick for many to appear (DO NOT FLIP EARLY, PANCAKE WILL FALL APART!). Flip and cook an addition 1-2 minutes on the other side.
