What I Eat In A Day November 2019

Eating thrills me. Still, after countless meals, snacks, dinners in and out, I really like to eat. I’m so glad I enjoy food, because for some it seems so complicated and jaded.

I yearn for the mornings when a simple bowl of oats, eaten quietly while the sun crests the frost bitten hedges around my apartment. 

I love cold runs, runny noses and hot breakfast with tons of tea.

It isn’t elaborate, but it’s time to myself.

Breakfast: oatmeal with protein powder, banana, cinnamon and peanut butter with some mango

I am blessed to work with my best friends, both of whom also love food. We relish in each other’s company, both encouraged by our appetites, and always willing to try something new. We’ve recently been on the burrito or salad kick, but that changes with the season or how good the bread feels that day. Yes, we know what good bread should feel and smell like.

Lunch: burrito with tofu scramble, black beans, kale, vegan cheese, onions and tomato

Usually around 3PM I have a snack habit. Recently it’s been just some toast or protein powder. The weather has turned colder, so smoothies aren’t really my jam. I found a few vegan protein options which are thicker, and therefore I get a pudding consistency with hot water, which I enjoy.

Snack: chocolate protein powder and coconut shreds, decaf coffee

My nightly meals have become more exciting as I continue to spend time cooking. Even if it’s just sautéeing onions or adding spices, I connect more with what I’m eating and it just tastes better. I’ve been really enjoying quinoa bowls with tofu scramble, making slaw and sauces. Also, if you melt vegan Daiya cheese, it’s pretty tasty on burritos. I’ve been a broccoli fan as long as I can remember, and having a bowl with dinner each night makes me happy. I’m grateful I love veggies, cooked any style, they have so much flavor. Thank God for adult taste buds.

I end my nights reading the paper and on a creamy note. Right now my plant based yogurt experiment is having good results, so I’ll just keep at it until my taste buds change. Also...extra drippy peanut butter from Once Again...send that straight to my mouth!
